Perfect Pairings: A Bedroom and a Recipe

We’ve all heard the saying “opposites attract”. And not only do they attract, but many times they work in perfect harmony – each enhancing and complimenting the beauty and positive attributes of the other.

Today’s room and recipe are perfect cases in point:

This beautiful rustic modern bedroom is a study in opposites that compliment each other. And the result is a fresh, light, and modern, yet cozy and welcoming, bedroom.

THE RECIPE
{blueberry topped lemon bars}

And speaking of opposites that make a perfect pair…  Lemon and blueberries are absolutely that, aren’t they?  Fresh, bright, and lively lemon clashing with dark, rich, sweet blueberry in an explosion of flavor.

And it kinda makes sense from a color wheel standpoint too. The outside of the blueberry is blue, of course, but take one juicy bite and you’ll discover… purple.  And what is purple’s complimentary color on the color wheel?  Yellow.  

Makes perfect sense.

I first tried this lemon with blueberry recipe at a July 4th celebration this year, and let’s just say it was tough to stop at one. I think you’ll like it too!

ingredients:

*Bar:

  • 1 lemon cake mix
  • 2/3 cup crushed graham crackers
  • 1/2 cup chopped pecans
  • 1/2 cup butter (1 stick), softened
  • 1 egg

Frosting:

  • 12 oz. full fat cream cheese, cold
  • 2/3 cup sugar
  • 2 cups heavy whipping cream (liquid)

Blueberries (1 pint + depending on size of blueberries and how closely you position them.)

preparation:

Preheat oven to 350 degrees (or 325 if you’re using a non-stick pan).

Using mixer, mix the cake mix, egg, butter, graham crackers, and pecans together until completely blended. Press into greased (or non-stick) 10 x 15 jelly roll pan. Bake until toothpick inserted in middle comes out clean. (Start checking at 10-12 minutes. It will likely take longer, depending on which option you choose, but you do NOT want to over bake these.)

Remove from oven and completely cool before frosting.

Cream the cream cheese and sugar together, and then slowly add the whipping cream until completely blended. Spread the frosting on the cooled lemon bars. (The amount will be generous.)

Top with blueberries.

Cover and refrigerate.

RECIPE NOTES

1. For best results, make these ahead of time and refrigerate overnight.  In my opinion, they’re much better the second day.  The frosting softens the bars, and the flavors completely meld.
*2. The original version of this recipe (ingredients above) results in a thin, cookie-like bar. For a slightly thicker version, increase butter to 1 cup and eggs to 2 (the slightly thicker version is shown in these images).

Both options are good, it just depends on the consistency that you like.

    There’s no mention of blueberries in the recipe. I assume that a pint or so is simply sprinkled on the frosting.

      Oops! You’re right Judy, the blueberrries are just added to the top once frosted. How much it takes depends on how closely you space them. I think I used about a pint and 1/4-1/2 on this one. I edited the post to add that in. Thanks for commenting!
