This series of posts really isn’t all about potatoes, but since we talked about sweet potatoes yesterday, we wanted to give mashed potatoes equal billing! Besides, these aren’t just any mashed potatoes, and they happen to be one of the favorite recipes of Linda, who is a Sales Associate at our Roseville store.
Here’s what she had to say:
I make Refrigerator Potatoes (aka Make-Ahead Cream Cheese Mashed Potatoes) every Thanksgiving. It was my mother’s recipe and all of my children, their spouses, and in-laws use the same recipe. They’re perfect for big dinners that require lots of last minute prep because you can prepare them the day before, refrigerate, and bake the day of your dinner. They’re great by themselves or with gravy!
Make-Ahead Cream Cheese Mashed Potatoes
- 5 lbs. cooked potatoes. (Linda uses russet)
- 8 oz. cream cheese
- 1 egg
- 2 teaspoons onion salt
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
The day before: Peel and cook potatoes, drain and mash until smooth. Add remaining ingredients (except for butter) and mix until blended. Place in greased 2 qt. casserole and dot with 2 tablespoons of butter. Refrigerate overnight.
Thanksgiving Day: remove potatoes and let them reach room temperature. Bake covered at 350° for about 1 hour. Remove cover and test with a sharp knife inserted into the middle of potatoes. If still cold increase the time to make sure potatoes are hot in the middle.
Linda is still using her Aspenhome dining set that was her first Schneiderman’s purchase and she still loves it!
