As you know, some of our staff has been sharing their favorite Thanksgiving recipes and dining rooms this week, and next up to share her favorites is Natalie, who offices in our Plymouth location.
Here’s what she has to say about her recipe: Love my Mom’s Dilly Bread at Thanksgiving! The savory flavor pairs so nicely with turkey and offers something a little different than ordinary rolls or bread. She has been bringing this for Thanksgiving family gatherings starting back when we would go to Grandma & Grandpa’s house in Raymond, MN so long ago. (she is also well known for her pies, but that is a whole different topic!)
Notes from Ruth (my Mom):
- It’s easy to make, don’t be intimidated
- Grease your hands with butter when handling the dough, and the bowl with butter prior to rising the dough
- Grease the casserole dish for baking
- It freezes great for use later on!
- 1 packet yeast
- 1/4 cup warm water
- 1 cup lukewarm cottage cheese
- 1/4 teaspoon soda
- 1 tablespoon dried minced onions
- 2 teaspoons dill seed
- 1 teaspoon salt
- 2 tablespoons salt
- 2 tablespoons sugar
- 1 tablespoon butter
- 1 egg, unbeaten
- 2 1/4 to 2 1/2 cups flour
Combine onion, dill seed, salt, sugar, butter, and egg in bowl and stir well. Add cottage cheese and yeast (that has been dissolved in warm water). Stir in flour and soda to form a stiff dough. Let rise until it doubles in size. Press down and divide in half. Place dough in two 4 1/2 x 8 inch bread pans. Let rise again. Bake at 350 for 40 minutes. When taken out of oven, brush top with butter and sprinkle with salt.
