The holidays are fast approaching (can you believe it?), and one of the things many of us look forward to during that time is gathering around the dining table with family and/or friends – talking, laughing, and sharing a good meal.
With that in mind, we’re going to be posting a different recipe and dining furniture favorite each day this week. Even though time and space don’t allow us to share something from every one of our team members, we’ll at least give you a “taste”.
RECIPE
First up is a sweet potato recipe from Larry Schneiderman. Here’s what he had to say:
“Thanksgiving and Easter are my two favorite holidays. For me, sweet potatoes with marshmallows melted over them remind me of Thanksgivings at home many years past. So, it’s a comfort food for me. When we say thanks for the food on the table, I’m especially ready to dig into the little casserole dish with this tasty treat!”
Candied Sweet Potatoes
yield: Makes 6 servings
ingredients
- 6 medium sweet potatoes, cooked and peeled
- 3/4 cup brown sugar
- 1 teaspoon salt
- 1/4 cup butter
- 1/2 cup miniature marshmallows
preparation
Cook, peel, and cube sweet potatoes. Mix together brown sugar, salt and butter. Layer sweet potatoes and sugar/salt/butter mix in a buttered 1 1/2 quart casserole, ending with mix. Bake uncovered at 375° for about 30 minutes (or until glazed). Add miniature marshmallows the last 5 minutes; brown lightly.
